Jason loves fajitas and I'd been thinking beef and we were having [livejournal.com profile] dpolicar and [livejournal.com profile] earthling177 over to meet our houseguest (Alex from Brazil) and hang out, so this seemed like a good thing to try.

I worked mainly from this recipe, with some tips from steve. At his suggestion, I got some annato seeds and heated them in olive oil over low heat while I was doing other things. The result was a beautiful dark orange oil that added warm flavor and color to the dish. I hadn't gotten cilantro, so I threw some coriander into the marinade and I also added some ancho powder. I used my vacuum marinator for the first time in a while and that worked well. Next time I would heat the pans longer and cook the steak a minute or two longer--the half that was in the cast iron skillet was still raw enough that after cutting it up, I threw it back in the pan and stir-fried it for a couple of minutes. But the meat was very tasty and it all worked beautifully, so I'll definitely do this again.

We washed it down with caipirinhas made with the cachaça and mix that Alex brought us. They were yummy, but I'm looking forward to making them from scratch sometime soon.

I'm also pleased to note that I'm back on pace after a poor showing in February and feeling more hopeful about actually completing the challenge this year.
