This week, while Jason was away, Alice helped me make the following:
Lemon-Thyme Mashed Potatoes In honor of
earthling177's birthday week, I made dinner for him and
dpolicar on Tuesday. I've been enjoying mashed potatoes more lately, so I decided to try the first recipe on this page. Alice helped me to pluck the thyme and then to mix the cream/butter/thyme/lemon into the potatoes--she gets annoyed with me when I do mixing tasks without asking for her help. I would not have thought to put lemon in potatoes, but I think it worked well.
Chicken Marsala For our main, I went ahead with the second recipe on this page, although I had white buttons instead of criminis, so I used those, and I don't like sweet marsala so I used up the last of the dry sack still lingering from Merry Wives. This is my favorite of the chicken marsala recipes I've tried, but I do think the criminis would be better and I would like to try replacing some of the salt in the recipe (which I was keeping low for other reasons) with tamari, to try to get the richer brown color pictured, rather than the greyish brown that resulted. I was a little hesitant to let her, but Alice climbed up on her stool and sauteed the mushrooms for me without touching the edge of the hot pan. While she was stirring them, she announced that she wants to be a cook-person when she grows up. I told her that would be wonderful, and suggested that perhaps she could be a cook on the ISS, so as not to abandon her previous goal of becoming an astronaut.
Pear Crisp I have come to really like crisps. They're hardly like baking at all, since the amounts are extremely forgiving and pretty much whatever you do, it still turns into crisp. It turned out that I only had 1.5 pears, rather than the two I had thought or the six that this recipe calls for, so I made individual crisps in small ramekins, went heavy on the nuts in the topping, and filled out the dishes with homemade vanilla ice cream and that worked just beautifully.
Nutella Cookies I've been meaning to make these for
muffyjo since I found the recipe a few weeks ago, and this week Alice announced that we were making cookies with sprinkles (she didn't seem to care what kind, as long as she got to put sprinkles on them) so I hauled out the Kitchen Aid and whipped up a batch. The dough was disturbingly like frosting in texture, but it made lovely, soft cookies. Alice put sprinkles on 2 dozen of them and I added the nuts in after that. I think I might go with even more nuts the next time around.
