#6 Salmon Patties Working from the recipe in Twist of the Wrist, but substituting 16 Trader Joe's Golden Entertainment Crackers for the 24 Ritz Crackers listed. These were very tasty, but incredibly rich, especially with the mayo. If I did them again, I would try reducing the smoked salmon by 1/3-to-1/2 and upping the crackers. The mayo could easily compensate for any dryness in the patties. I'd also like to try baking these instead of frying them. We served them with baby greens, radish sprouts and fresh radishes, as suggested, and that made for a very tasty combination with a lot of different textures.
#7 Chipotle Mayo I'm going to take credit for this one separately, since it's in a completely separate section of Twist of the Wrist. I'm not one for super-spicy, but I ended up doubling the amount of chipotle in this recipe and I think I could have tripled it without it being too spicy. It's really delicious and I'm thinking of other things to do with the leftovers.
When
muffyjo heard that we had eaten Brussels sprouts without her, she demanded a rematch. This time we divided the batch into thirds, dosed one with Balsamic vinegar as we had on Sunday, dosed another with a half teaspoon of dried thyme and a teaspoon of lemon juice, and the last we left plain (with just bacon, garlic, salt and pepper, that is). We liked the lemon, but found the thyme too much. If I had fresh thyme in the house, this might be a good thing to throw it into, but I don't think I would use dried again. A dash of lemon juice seems like a fine addition, but not actually necessary to tastiness.
